Our first house warming gift was an ice cream maker. Best. Gift. Ever. This flavour is based on the Cereal Milk ice cream made famous by Momofuku's Milk Bar.
Cereal Milk
100g of cereal (I used a mix of fruit loops and corn pops)
50g of skim milk powder
2 tbl sugar
¼ tsp salt
¼ cup melted unsalted butter
2 cups whole milk
Pre heat the oven to 275f. Combine milk powder, sugar and
salt. Add melted butter to cereal then add the sugar mixture. Toss to combine. Spread mixture out on a baking sheet and bake
for 30 minutes. Let mixture cool to room temperature. Add cooled mixture to the milk and let steep
for at least an hour in the fridge. Strain mixture and you should have 1 ½ cups of
cereal milk.
Ice Cream
1 ½ cups cereal milk
1 cup heavy cream
½ cup sugar
4 egg yolks
Combine the cereal milk, heavy cream and ¼ cup of sugar in a
saucepan and bring to a simmer. Remove from heat. Whisk the egg yolks and remaining
sugar together. Gradually whisk in half a cup of the warm milk mixture. Whisk
yolk mixture into remaining cream. Cook over medium heat, stirring constantly, until
thick enough to coat a spoon. Strain
custard into a medium bowl set into a bowl of ice water, let cool. Process
custard in an ice cream maker. Transfer to
a air tight container and freeze until firm. Serve with a topping of your
favourite cereal. I used Frosted Flakes.
